Position Title: Dietary Supervisor/Cook
Supervisor’s Title: Dietary Manager
*General Statement of Responsibilities:* The Dietary Supervisor/Cook is responsible for preparing residents’ meals according to planned menus and for assisting in the cleanliness, organization and maintenance of the kitchen, so that it is in full compliance with the standards and regulations of: The Department of Health, state and federal licensure regulations & mandates, and OSHA.
The Dietary/Supervisor/Cook also assists in the supervision of the dietary aide staff.
The Dietary Supervisor/Cook assists in ordering food and supplies, and insuring proper, safe storage of such foods.
*Qualifications:*High School Education.
Experience Preferred.
*Major Job Duties:* 1.
Devlop, implement and ensure policies, procedures, and practices in meal service and kitchen operation meet and comply with the federal and state regulations, OSHA, etc.
Immediately implement any corrective action should any violation occur.
2.
Prepare meals according to menus ensuring all meals meet the dietary requirements of each resident.
3.
Train, supervise and schedule dietary staff.
4.
Assist in the preparation of menus, and make suggestions for new recipes and menu ideas.
Maintain a recipe file.
5.
Ensure food is prepared and served to accommodate special diets, and food is served according to the recommended portion control.
6.
Ensure the cleanliness and sanitation of the kitchen, and all items in the kitchen such as equipment, utensils, pots and pans, dishes, flatware, etc.
7.
Ensure safety in the operation of the kitchen and dining room, and immediately report and hazardous condition or faulty equipment to the Dietary Manager or Maintenance Supervisor.
8.
Establish and maintain an effective working relationship with staff in the facility and all other staff to facilitate the meal service function and dietary needs of residents are met.
9.
Assist in serving meals as needed.
10.
Supervise the dietary aide/kitchen staff, and provide direction.
11.
Assist in the planning and preparation of refreshments for special events and functions.
12.
Perform other duties as assigned to ensure the delivery of quality meal service program at the facility.
13.
Attend and participate in Food Preparation Committee.
Prepare and submit any reports as required.
14.
Immediately report any employee injury to the Dietary Manager.
15.
Perform other duties as assigned to ensure the delivery of quality meal service program at the facility.
*Knowledge, Skills, & Abilities In:* Menu planning, accommodating special diets, meal service regulations & standards, supervision of staff, appropriate serving practices in dining room, cleaning & sanitation, ordering/purchasing food supplies, sanitary food handling practices, operation of kitchen equipment, effective written, oral, and interpersonal communication skills, ability to work with residents, must be able to read and speak English, and follow written directions.
*Physical Requirements:* Must be able to stand for long periods of time, be able to bend, stoop, lift, stir and move intermittently throughout the work day, must be able to lift and move up to 50 lbs.
Occasionally, must be able to physically operate kitchen equipment such as slicers, mixers, etc.
, Must possess sight, hearing, and taste senses.
